I don't know if zucchini is plentiful where you all are during the winter, but I've been enjoying this recipe, as zucchini is relatively cheap (when it's in season). I know I found this on the internet somewhere but cannot for the life of me find it!
But here is the general idea:
Slice zucchini with that little slice thing on the cheese grater, or a salad shooter, or a food processor, if you have nice stuff.
spread slices over a cookie sheet sprayed with non-stick spray (or olive oil if you want, watch the calories though).
sprinkle lightly with parmesan cheese. Bake for 12-15 minutes (or more? I never time it, I just keep an eye on it). When the cheese starts to turn a nice light brown then it's done.
Pull out and scoop onto a plate and eat the WHOLE DANG THING! (as long as there isn't too much olive oil or cheese, watch portion size on cheese) because it's healthy for you!
Think that will make it onto Martha Stewart? It really is good though. One of my favorite things to eat. If I didn't have to bleach my zucchini, I would probably eat it a lot more often.
